Brazil Santos is known for an approachable flavor profile built around chocolate, nuts, sweetness, and mild acidity. This coffee is grown in Paraná and São Paulo at elevations between 750 and 1,050 meters in volcanic loam soil.
Catuai and Mundo Novo are cultivated varieties of Arabica coffee commonly grown in Brazil. Catuai can contribute gentle sweetness and a balanced structure, while Mundo Novo commonly brings body, chocolate depth, and a rounded finish.
The pulped-natural process removes the outer skin of the coffee fruit while leaving some of the fruit material around the seeds during drying. This can preserve more sweetness and body than a fully washed process while maintaining greater clarity than a traditional natural process.

Recommended Espresso Recipe:
Use a fine, even grind intended for an espresso machine.
Place approximately 3½ level tablespoons of coffee into a double espresso basket. Distribute the grounds evenly and tamp them level using firm, consistent pressure.
Set the brewing temperature between approximately 190°F and 195°F. This temperature range helps develop the cocoa, caramel, and toasted-nut flavors without introducing unnecessary bitterness.
Extract approximately 1¼ to 1½ fluid ounces of espresso. Aim for an extraction time of approximately 25 to 30 seconds.
Stir the finished espresso gently before tasting. Cocoa and milk chocolate should form the foundation, followed by caramel, brown sugar, and toasted nuts.
If the espresso tastes bitter, dry, or harsh, grind slightly coarser, lower the brewing temperature, or stop the extraction sooner.
If the espresso tastes thin, weak, or sour, grind slightly finer or allow the extraction to continue a little longer.
For an Americano, add hot water after extracting the espresso. For a cappuccino or latte, combine it with steamed milk. The cocoa, caramel, and toasted-nut characteristics remain noticeable through milk.
