The cup opens with ripe berry flavor, bringing a juicy fruit sweetness that immediately gives the coffee its expressive character. Depending on brewing method and temperature, the berry may resemble strawberry, blueberry, raspberry, or a combination of darker and brighter fruits.

This coffee is grown in Sidama, Ethiopia, at elevations between 2,000 and 2,200 meters. The high elevation slows the development of the coffee fruit, allowing natural sugars and aromatic characteristics to become more concentrated before harvest.
The coffee is produced from local Sidama heirloom varieties. Ethiopian heirloom coffee includes numerous genetically diverse varieties that have developed within the region over generations. This diversity contributes to the complex fruit, floral, citrus, and tea-like characteristics commonly found in Ethiopian coffee.
Unlike fully washed coffee, the natural process allows the whole coffee fruit to dry around the seeds before it is removed. As the fruit dries, the coffee can absorb more of its sweetness and fruit character, creating the ripe berry and jam-like qualities that distinguish this cup.
Sun drying allows the fruit and coffee seeds to dry gradually. Careful drying is important because it preserves sweetness while keeping the finished cup clean rather than fermented or overly heavy.

Recommended Pour Over Recipe:
Use a medium grind with a consistency similar to ordinary table salt.
Use approximately 4 level tablespoons of coffee for 12 fluid ounces of brewed coffee.
Heat fresh, filtered water to approximately 195°F. Avoid pouring fully boiling water directly onto the grounds because excessive heat may make the acidity feel sharper and reduce the coffee’s delicate sweetness.
Place a paper filter in a V60, Chemex, or other pour-over brewer. Rinse the filter thoroughly with hot water to remove any paper taste and warm the brewer. Discard the rinse water before adding the coffee.
Add the ground coffee and gently level the bed. Pour approximately 1½ fluid ounces of water evenly over the grounds and allow the coffee to bloom for 30 to 45 seconds.
Continue pouring slowly in controlled circles until you have added approximately 12 fluid ounces of water. Avoid pouring directly against the filter walls.
Aim for a total brewing time of approximately three to four minutes. Allow the finished coffee to cool for several minutes before deciding which flavors you taste. The berries, caramel, vanilla, and florals may become more distinct as the temperature drops.
If the coffee tastes sharply sour or thin, grind slightly finer or extend the brewing time. If it tastes dry, bitter, or overly sharp, grind slightly coarser, shorten the brewing time, or lower the water temperature.
Drink it black first to experience the fruit and floral profile clearly. A small amount of milk may soften the acidity and complement the caramel and vanilla, but heavy creamer or sweetener can cover the berries and florals.
