The cup opens with lemon and lime, creating a lively citrus character that brightens the coffee without making it taste sharply sour. The citrus has a clean, refreshing quality that brings definition to the cup while allowing its sweeter characteristics to remain noticeable.

This is not a flavored coffee. The lemon, lime, nougat, brown sugar, and gently nutty characteristics come naturally from the coffee rather than added flavoring.
The coffee is grown by approximately 400 producers in Huehuetenango, one of Guatemala’s celebrated high-elevation coffee regions. Mountainous terrain and elevations between 1,800 and 2,000 meters allow the coffee fruit to mature gradually, encouraging concentrated sweetness and clearly defined acidity.
Bourbon commonly contributes rounded sweetness and balance. Caturra can provide brightness and definition, while Catuai often brings structure, body, and a smooth foundation beneath the more delicate characteristics.
The clay mineral-rich soil supports the coffee plants while helping establish the structured, balanced profile found in the finished cup. The high elevation keeps the coffee lively, while the medium roast develops enough sweetness to prevent the citrus from feeling overly sharp.
The fully washed process removes the fruit surrounding the coffee seeds before drying. This promotes a cleaner cup and allows the lemon, lime, nougat, and brown sugar to remain individually recognizable.

Recommended Pour Over Recipe:
Use a medium grind with a consistency similar to ordinary table salt.
Use approximately 4 level tablespoons of coffee for 12 fluid ounces of brewed coffee.
Heat fresh, filtered water to approximately 195–200°F. Avoid pouring fully boiling water directly onto the grounds because excessive heat may make the citrus taste sharper and reduce the coffee’s nougat and brown sugar sweetness.
Place a paper filter in a V60, Chemex, or other pour-over brewer. Rinse the filter thoroughly with hot water to remove any paper taste and warm the brewer. Discard the rinse water before adding the coffee.
Add the ground coffee and gently level the bed. Pour approximately 1½ fluid ounces of water evenly over the grounds and allow the coffee to bloom for 30 to 45 seconds.
Continue pouring slowly in controlled circles until you have added approximately 12 fluid ounces of water. Avoid pouring directly against the filter walls.
Aim for a total brewing time of approximately three to four minutes. Allow the finished coffee to cool for several minutes before deciding which flavors you taste. The lemon, lime, nougat, and brown sugar may become more distinct as the temperature drops.
If the coffee tastes sharply sour or thin, grind slightly finer or extend the brewing time. If it tastes dry, bitter, or overly sharp, grind slightly coarser, shorten the brewing time, or lower the water temperature.
Drink it black first to experience the citrus and sweetness clearly. A small amount of milk can soften the acidity and complement the nougat, but heavy creamer or sweetener may cover the lemon and lime.
