Our Mexico Single Origin Coffee is best described as a smooth, layered, and quietly complex medium roast with deep chocolate, warm Canela Cinnamon, crisp green apple, roasted nuts, caramelized sweetness, and a softly smoky finish.
Chocolate provides the cup’s foundation, ranging from dark cocoa and milk chocolate to a richer, fudgier character depending on how the coffee is brewed. Warm Canela Cinnamon develops through the chocolate, contributing a softer, more aromatic spice than the sharper cassia cinnamon commonly found in American cupboards.
Crisp green apple cuts through those warmer flavors with a clean, refreshing brightness. It keeps the chocolate and spice from becoming too heavy while giving the cup a livelier middle. As the coffee settles, roasted-nut flavors, molasses-like sweetness, caramel, and a subtle smoked applewood character may emerge.
Customers drinking coffees from Chiapas and Oaxaca report a broad but connected range of flavors. Chocolate is the most consistent theme, appearing as cocoa, milk chocolate, fudge, brownie, and chocolate sauce. Other reported tastes include caramel, molasses, sugarcane, toasted marshmallow, hazelnut, peanut, almond, dried green apple, citrus, dark cherry, gentle herbs, and smoked wood.
Brewing method strongly affects which of these flavors become most noticeable. French press concentrates the chocolate, fudge, nuts, caramelized sweetness, Canela Cinnamon, and smoked applewood while creating a fuller texture. Pour over separates the brighter green apple and citrus from the chocolate but can produce a lighter, less substantial cup. Standard drip creates the most even everyday balance. Espresso intensifies the cocoa, caramel, and spice, while cold brewing suppresses much of the fruit and emphasizes chocolate, nuts, and molasses-like sweetness.
Your coffee is roasted after you order, then packed and shipped within days. It does not sit in a warehouse waiting for someone to buy it. This allows its aroma, body, and layered flavor to reach you while the coffee is still at its best.

Why It Stands Out:
This is not a flavored coffee. No chocolate, fruit, cinnamon, nuts, caramel, or smoke flavoring is added. These are naturally perceived characteristics created by the coffee’s varieties, growing environment, processing, roasting, and preparation.
Canela Cinnamon is specifically used here instead of ordinary cinnamon because the tasted spice resembles the softer, warmer, more fragrant character associated with Mexican canela. It does not present like harsh or aggressively woody cupboard cinnamon.
The coffee combines five cultivated Arabica varieties. Typica and Bourbon are associated with clarity, sweetness, and balance. Caturra can contribute lively acidity and definition. Mundo Novo frequently adds body and balance, while Criollo contributes to the coffee’s regional complexity.
The beans are fully washed before being dried in the sun. Washed processing removes more of the fruit surrounding the coffee seed before drying, encouraging cleaner separation between the chocolate, spice, fruit, and nut characteristics.
Reviews associated with this exact SKU family repeatedly describe the coffee as unusually bold for a medium roast while remaining smooth and easy to drink. Independent drinkers exploring comparable Chiapas and Oaxaca coffees identify the more specific flavors behind that experience: cocoa, fudge, chocolate sauce, caramel, molasses, sugarcane, toasted marshmallow, roasted nuts, apple, citrus, cherry, herbs, and smoked wood.
French press provides the strongest connection between those reported flavors. Its immersion brewing and metal filtration preserve the oils and fine particles responsible for the heavier texture, making the chocolate taste fudgier, the nuts more pronounced, the Canela Cinnamon warmer, and the smoky finish deeper.
Best Brewing Methods:
-
French Press: Produces the fullest body and most complete expression of the coffee’s chocolate, fudge, roasted nuts, caramelized sweetness, Canela Cinnamon, and smoked applewood. The metal filter retains more natural oils, creating the thicker texture customers associate with cocoa, brownie, and chocolate-sauce flavors.
-
Standard Drip: Creates the most balanced everyday presentation. Chocolate, Canela Cinnamon, roasted nuts, apple, and caramelized sweetness remain connected without making the body as heavy as French press or the fruit as prominent as pour over.
-
Pour Over: Provides greater clarity and makes the crisp green apple, citrus, gentle fruit, and lighter sweetness easier to distinguish. Paper filtration reduces oils and sediment, producing a cleaner but lighter cup. This method may sacrifice some of the fudge, nut, and smoked-wood depth.
-
Espresso: Concentrates the chocolate, caramel, Canela Cinnamon, and roasted-nut flavors while creating a sharper flash of fruit. It works well as straight espresso or in an Americano, cappuccino, or latte, although the concentration may overpower the coffee’s more delicate apple and citrus characteristics.
-
Cold Brew: Produces a mellow, low-sharpness interpretation emphasizing cocoa, chocolate, molasses, caramel, and roasted nuts. It is a strong alternative for customers who prefer less fruit and acidity, but it considerably softens the green apple and citrus that give the hot-brewed coffee its brighter character.
Based on customer-reported tastes of fudge, cocoa, chocolate sauce, caramel, toasted marshmallow, hazelnut, peanut, almond, Canela Cinnamon, and smoked wood, French press is our winning brewing method. Independent preparation comparisons specifically favored French press for creating a thick, satisfying cup with brownie-like chocolate and roasted-nut flavor. Its full-immersion extraction also supports the Canela Cinnamon and smoked applewood identified in customer tasting. Standard drip remains our recommendation for a cleaner everyday cup, while pour over is best when you want the green apple and citrus to take priority over the coffee’s heavier chocolate body.
French Press Brewing Instructions:
Use Level 3 Coarse Grind or grind whole beans to a coarse, even consistency.
For a 16-fluid-ounce French press, use approximately 5 level tablespoons of coffee with 2 cups of water. For a smaller serving, use approximately 4 level tablespoons of coffee with 12 fluid ounces, or 1½ cups, of water.
Heat fresh, filtered water to approximately 195–200°F.
Place the coffee in the French press. Pour in just enough water to saturate the grounds completely and let the coffee bloom for approximately 30 seconds.
Add the remaining water and stir gently. Place the lid on the French press without lowering the plunger. Let the coffee steep for approximately four minutes.
Press the plunger downward slowly and evenly. Pour the coffee immediately after pressing so it does not continue brewing against the grounds.
If the coffee tastes overly bitter, dry, or excessively smoky, shorten the steep slightly or use water closer to 195°F. If it tastes weak or hollow, increase the amount of coffee rather than allowing it to steep excessively long.
Drink it black first to identify the chocolate, Canela Cinnamon, green apple, nuts, and smoked applewood. A small amount of milk or creamer will complement the chocolate, caramel, and nut characteristics, but heavy sweeteners may cover the apple and citrus.
Choose Your Grind:
Level 1. Espresso: Very fine. Concentrated, chocolate-forward, and intensely aromatic. Built for espresso machines.
Level 2. Standard: Medium grind. Smooth, balanced, and reliable. Best for automatic drip machines, coffee pots, pour over brewers, and reusable Keurig pods.
Level 3. Coarse: Large grind. Full-bodied, rich, and lower in perceived bitterness. Best for French press and cold brew.
Level 4. Whole Bean: Full beans. Best for maximum freshness, complete control, and grinding immediately before brewing.
